The younger the tea leaves, the more ‘umami’ and vitamin C they contain. To enjoy the special taste of a first flush tea, it is important to make the tea with water that has cooled slightly after boiling (80°C). Sasaki Seicha tea company is located in Shizuoka Prefecture, which is famous for good quality green tea. Their sencha products have been awarded various prizes many times.
