This additive free miso is made up of 24% fresh koji (twice the amount of standard miso pastes), giving the miso a unique sweetness and deep umami quality. The extra koji content has the additional benefit of aiding digestion. Use this white miso for soups or as a flavour-enhancing, odour-eliminating seasoning.
