Description

Supple Inaniwa udon made with centuries worth of skill and care.

A much-loved speciality of Akita prefecture and among Japan's 3 finest varieties of udon, this hand-crafted pack of Inaniwa udon noodles is made using only the highest quality flour from Hokkaido, as well as over 400 years of noodle making expertise.

Made using fresh spring water from Kurikoma mountains and just a pinch of Japanese sea salt to season, these udon noodles have a distinctively fluffy, chewy quality that comes from 4 days of rigorous kneading and maturing. This thorough, traditional process creates tiny bubbles that stretch and expand when cooked, not only allowing these thinly-cut noodles to boil in just 3 minutes, but also creating their soft and silky, satisfying texture, perfect to both dip in tsuyu or enjoy in a toasty noodle broth.
