Method

Prepare the yuzu: Wash and clean the yuzu with a salt rub to remove any waxy coatings. Then rinse the yuzu well. Cut each yuzu into quarters and remove any seeds that you can. Separate each yuzu section from the peel and place the sections into a colander over a bowl. Smash the sections to get as much juice out of them as possible leaving the flesh in the colander. Remove any seeds from the colander if they remain and dispose. Set the flesh and juice aside.

Slice the yuzu: Cut the peel of the yuzu into thin strips, about 5mm in width. Set aside.

Heat the saucepan: Place the sliced peel, yuzu juice, flesh, sugar, and water into a saucepan and stir well. Bring to the boil. Once the mixture has come to a boil, reduce the heat to medium-low and simmer for about 30 minutes until it has thickened to a marmalade consistency.

Set the marmalade: Pour into a clean jar while still hot and allow to cool in the jar.

Serve: Once cool, serve with your favourite bread or cakes for a delicious treat.
